Baobab za’atar

Baobab fruit cracked open to reveal its naturally powdery white flesh and dark seeds within — a beautiful glimpse into one of Africa’s most iconic and nutrient-rich superfruits. The textured shell and earthy interior capture the raw simplicity of the African bush.

 

4 tablespoons dried thyme leaves

1 tablespoon baobab powder, or to taste

½ teaspoon fine salt, or to taste

4 tablespoons sesame seeds, dry-roasted

Yield: about ½ cup

  1. Grind the thyme leaves finely, sift to remove any larger particles. Transfer to a small bowl.

  2. Mix together the baobab and the salt. Add the thyme. Stir in the sesame seeds, taste, and adjust according to preference.
